Banana Waffles with Macadamia Nut Crema
These fresh, sweet, light & fluffy waffles are to die for- they are intensely chewy, super light, and almost dessert-like! Last month I had a friend in town and she is a waffle and pancake connoisseur. These were by far some of the best waffles we've both ever had. And that, my friends, is quite a statement.
I made some macadamia nut cream from My New Roots to accompany such a decadent breakfast. Also added some cacao nibs, cherries, and maple syrup on top just to out-do ourselves.
Waffle Recipe:
Trader Joe's waffle mix (follow instructions on box)
1 very ripe banana, mushed to a pudding
Simply make the waffle mix following instructions, and then add your mashed banana. Pour into a waffle maker and heat until golden brown.
Macadamia Nut Crema Recipe:
1 cup raw, unsalted macadamia nuts
3 tbsp maple syrup
1 tsp salt
1/2 tsp vanilla extract
Toss all ingredients in a blender or food processor. Blend on high until smooth. Seal in an air-tight container for up to 3 days. But it probably won't last that long because this stuff is so good.
