Raw Vegan Maple Donut Holes
Everyone loves a donut. Who doesn't? Recently I was up in Vermont with my family and we tasted some locally baked maple cream donuts, and they were SO good.
Naturally, I wanted to re-invent them and make them no-bake, vegan, and with whole ingredients that I could easily pronounce. These are still a treat - just because they are raw/vegan does not mean they aren't loaded with sugar and healthy fats! #MODERATION
Raw Vegan Maple Donut Holes
-6 soaked medjool dates
-1 cup unsweetened shredded coconut
-3 tbsp pure maple syrup (use the good stuff)
-coarse sea salt
Blend ingredients well in a food processor, about 4 minutes until dough is achieved. Roll into balls, then freeze for 20 minutes.
In a separate bowl, mix 6 tbsp melted coconut oil with 3 tbsp maple syrup and a sprinkle of more sea salt.
Roll each ball into the coconut oil and freeze again. Continue to coat donut balls and re freeze until a thick, gooey maple layer is achieved on each donut! Store in fridge and consume within 10 days.
