Layered Banana Cream Pie #Pi4All

Food allergies. Let's face it, they suck. We all know someone who has them. Growing up, the kids who had allergies had to sit at different tables and they couldn't partake in all of the delicious birthday treats our mothers would bake for us on classmate birthdays.

Food allergies are a sometimes fatal condition in so many people's lives, and I feel that we as a community need to be more educated and in-tune with the issue. That is why I was so excited to be apart of #Pi4All, an Instagram contest put on by So Delicious Dairy Free.

AWARENESS. LET'S SPREAD IT.

The best way to educate a society it to first make them aware. My quadruple layered banana cream pie in all of its deliciousness and ridiculousness is to help spread awareness about food allergies. My pie is dairy free, peanut free, gluten free, and best of all- no bake!

For every photo of allergy-friendly pie uploaded to Instagram between 3/13-3/15 So Delicious will donate $3.14 to Kids with Food Allergies (KFA). Recipe

Crust:

6 medjool dates

¾ cup walnuts

splash of cinnamon

1 tsp sea salt

Filling:

2 bananas

½ cup So Delicious dairy free coconut yogurt

¾ cup cashews

2 tbsp coconut oil

To make crust:

Place medjool dates, walnuts, cinnamon, and sea salt in a blender or food processer. Blend or process until a thick, dough-y consistency is achieved. The dough just be easily manipulated between your fingers.

To make filling:

Place all ingredients in a blender.  Blend for 2 minutes. This should be extremely thick and gooey. If too liquid-y, add more cashews as needed. Don’t add any water, this filling should be like pudding.

Place one layer of crust in a mason jar, then add pudding. Place in freezer for 30 minutes to set. Add another layer of crust, then more pudding, place in freezer, and repeat until all of the ingredients are used up!

For layering, I added fresh banana and coconut cream, plus some crushed walnuts. Get creative here- add peanut butter, cacao nibs, and hemp seeds. Enjoy!
