Peanut Butter Overnight Oats and Jelly Smoothie
Overnight oats are the best thing that happened to non-morning people since waking up at noon on a lazy Sunday.
Overnight oats are when you mix raw oats the night before and let them soak and expand in the fridge overnight. In the morning, you just grab and go. Or, if you're like me, you pile on a bunch of superfoods to make the most ridiculous breakfast in the world.
*PSA* If you know someone in your life who says that healthy food is boring/gross, please give them my number and I will happily send them a picture of my breakfast each morning with the nutritional breakdown accompanied by a selfie with chia seeds in my teeth until I win them over.
For this nutritious breakfast, I made raw peanut butter chia oats, let them soak overnight, and then in the morning, I made some berry banana ice cream to layer on top. This made for such a decadent, ti-layered breakfast that was almost as fun to eat as it was pretty. I actually ended up taking off the smoothie part and eating it separately because it was piled so high and I had to drive to work.

Recipe
BASE: Peanut Butter Chia Overnight Oats
1 cup raw oats
2 tbsp peanut butter (I used powdered peanut butter: PB2)
1/2 cup almond milk
2 tbsp chia seeds
pinch of sea salt
Mix ingredients very well in a mason jar. It should be thick. Really thick. The chia seeds and oats will soak in the excess liquid. Let sit over night and go to a party or watch Netflix in bed. Whichever you choose.
In the morning, add a layer of coconut yogurt if you do so choose. I used So Delicious unsweetened coconut yogurt.
Berry Banana Icecream
1 frozen banana
1/4 cup raspberries
1/4 cup blackberries
1/4 cup blueberries
1 tbsp maca powder (optional)
Mix ingredients in a high powered blender for 40 seconds. Mix well with a tamper to get all the pieces. This ice cream should be extremely thick.
Top with goji berries, coconut shreds, and blackberries and have the best day ever.
